Tomato Garlic Pasta



A quick and easy dish that comes together while your pasta is cooking. Nothing fancy or complicated as you only need tomatoes and garlic to make the sauce. You can also add some red chili flakes with the garlic for a kick.

Tomato Garlic Pasta

Ingredients 1/2- 1 pound pasta Salt 2-3 Tablespoons extra-virgin olive oil 3-4 cloves garlic, thinly sliced 1 - 2 pints cherry / grape tomatoes Salt and Pepper Garnish: basil or parsley Grated Parmesan cheese

Directions Boil pasta in salted water according to package directions for al dente. Heat oil in a large skillet, Add garlic and cook for a few minutes until garlic is soft. Add tomatoes and continue to cook until tomatoes begin to soften. Gently press with the back of a wooden spoon to help the tomatoes burst as they soften. Continue to cook for about 5 minutes. Taste and add salt and pepper as needed. ( don’t add too much salt as pasta water will be added) Once pasta is cooked, reserve about a cup of pasta water and drain. Add pasta to sauce and cook about a minute adding some of the pasta water, as needed, for consistency desired. Optional: Add about a Tablespoon of olive oil to pasta and stir together. To serve: Top with grated parmesan cheese and basil.
