Seafood Linguine



This is a great recipe for a dinner party as it looks elegant but easy to make in under 30 minutes. Add your favorite seafood such as clams, mussels, shrimp, scallops, etc.

For wine pairing, choose a crisp white wine with hints of citrus such as Pinot Grigio.


Seafood Linguine

Serves 6

Ingredients

2 Tablespoons salt

1 pound linguine

1 Tablespoon olive oil

2 shallots, minced (can use 1/2 onion)

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 1/2 cups white wine

1 lb seafood ( clams, mussels, shrimp, etc)

1 (28oz) can diced tomatoes with juice

1 teaspoon salt

1 teaspoon pepper

1 Tablespoon butter

Zest and juice of 1 lemon

¼ cup parsley, chopped

Salt and pepper to taste

Directions

In a large pot, cook linguine in salted water according to package directions for “al dente”.

Meanwhile, heat olive oil in a large sauté pan. Add shallots, garlic and red pepper flakes and sauté or a few minutes.

Add in wine, seafood, tomatoes, salt and pepper and simmer covered until clams open, approximately 3-5 minutes. ( discard any that do not open).

Reserving about 1 cup of pasta water, drain linguine and add to the pan. Add butter, lemon zest and juice and toss together Add reserved cooking water, if pasta looks dry.

Add parsley, drizzle of olive oil and toss to coat. Transfer to serving dish and garnish with additional parsley if desired.
