Chorizo Cheese Dip


My go to appetizer for family gatherings. So easy to make as there are no specific measurements and takes less than 15 minutes to cook and assemble. While in the oven, prep your toppings.

You can easily modify meat, cheese and topping ingredients. I use chorizo for flavor and spices but if using regular ground meat, add some seasonings or optional jalapeño for spice.


This is also a great make ahead appetizer. Cook as directed, transfer to a baking dish and place in the refrigerator. Before serving, bake and add your toppings. Easy peasy!



Chorizo Cheese Dip


Ingredients

1 Tablespoon olive oil

1/2-1 onion, diced

3-4 garlic cloves, minced

1 lb chorizo, sausage or ground meat

1 block of cream cheese (or any cheese)

1/2 - 1 can diced tomatoes (salsa)

Shredded cheddar or Mexican blend cheese ( or any other cheese)

Optional Toppings: shredded cheese, tomatoes, green onions, cilantro, onion, etc.

Serving: Chips, bread, or vegetables


Directions


Preheat oven to 375 degrees F.

Heat oil in a skillet. Add onions and garlic and sauté for a few minutes.

Add chorizo and sauté until cooked.

Add cream cheese and stir until cheese has melted

Stir in tomatoes.

Transfer to a baking dish and bake for about 20 minutes or until bubbly.

(Optional: top with shredded cheese the last 5 minutes of baking).

Add your favorite toppings and enjoy!
