Butternut Squash Steaks





I had some sage left from my one pan pork chops recipe so decide to make this Butternut Squash Steaks in Sage Brown Butter Sauce. This will become one of your favorite vegetarian meal or side dish this fall.


Butternut Squash Steaks


1 large butternut squash, sliced thin (buy one with a long thick neck) or 2 small

salt and pepper

1 Tablespoon olive oil

2 Tablespoons butter ( or vegan butter)

1 Tablespoon balsamic vinegar ( optional)

4-5 sage leaves

2 garlic cloves, minced


Directions

Butternut squash: Peel neck and slice lengthwise into steaks. (Reserve base for another recipe) Sprinkle salt and pepper on both sides.


Heat oil in a skillet. Cook squash steaks, turning every few minutes until cooked and browned. Reduce heat and ad butter, optional balsamic vinegar, sage and garlic. Coat squash with melted butter using a spoon and continue to cook /baste until butter is browned. Season with salt and pepper, if needed.
